Carrot Cake
2-cups sugar
1 1/2-cups Wesson oil
4-whole eggs
3-cups raw carrots (grated)
2-cups flour
2-teaspoons baking powder
2-teaspoons soda
2-teaspoons cinnamon
1-teaspoon salt
Mix sugar and Wesson oil thoroughly.
Add egg, one at a time and beat well. Add carrots. Add
dry ingredients to the mixture and beat 3 minutes. Bake in 3 layers
for 35 minutes in 350 degrees.
Maple Sugar season reminds me of this delicious
recipe from my cousin Velma Farney who lives in upstate New York, and has
a sugar bush where they tap the maple trees and make some delicious maple
syrup. This can be served over ice cream and the above carrot cake.
Maple Gravy
1 quart Maple Syrup
1/2 cup butter
1-cup flour
1-1/2teaspoon vanilla
Combine melted butter with flour until
smooth. Add syrup slowly. Cook 10 minutes in microwave oven
on high.. When thickened, add vanilla.
